Not so long ago, within the memory of many of our parents and grandparents, most fruits and vegetables on North American tables came from our own gardens or from gardens close by, Eggs, milk, and meat also came from local sources. Today, the average item of food travels over a thousand miles before it lands on our tables. It is a remarkable technological accomplishment, but it has not proven to be healthy for our communities, our land or us. Through stories and simple "whole foods" recipes, Mary Beth Lind and Cathleen Hockman-Wert explore how the food we put on our tables impacts our local and global neighbors. The quartet follows Katie's dramatic journey, giving horse lovers a realistic glimpse into the American West during the 1840s.

Food stylist - A food stylist is someone who makes food look attractive in photographs. The aim is to make the food look fresh and delicious.

Organic food - Organic food is, in general, food that is produced without the use of artificial pesticides, herbicides, and genetically modified organisms (GMOs). Slow Food - The Slow Food movement, coined in response to "fast food", claims to preserve the cultural cuisine and the associated food plants and seeds, domestic animals, and farming within an ecoregion. It was begun by Carlo Petrini in Italy as a resistance movement to fast food but has since expanded globally to 100 countries and now has 83,000 members.
